BOURBON PORK CHOPS

1/3 cup all-purpose flour

½ teaspoon salt

¼ teaspoon pepper

4 (1-incb-tblck) pork chops

1 tablespoon vegetable oil

4 orange slices

2 ·tablespoons brown sugar

2 tablespoon cornstarch

¼ teaspoon ground allspice

l cup bot water

¼ cup orange juice

2 tablespoons bourbon

¼ cup·currants or raisins

Combine flour, salt, and pepper; dredge pork chops in flour mixture.

Heat oil in a large skillet over medium heat; brown pork chops on both sides.

Place an orange slice on top of each chop.

Combine brown sugar,cornstarch,and allspice in a small saucepan;

gradually stir in water.

Cook over medium heat, stirring constantly,until mixture thickens and comes to

a boil.

Cook 1 minute, stirring constantly.

Remove from heat; stir in orange juice,bourbon and currants.

Spoon over pork chops. Cover, reduce heat, and simmer 1 hour or until pork chops

are tender.

Yield: 4 servings.
